Ham & Jam Sandwich

Ingredients (1 sandwich):

Deli Roll or Sub Bun

100-150g Sliced Deli Ham

2oz Sliced Swiss

1/2 Cucumber (thinly sliced)

1 shallot (thinly sliced)

Handful of Arugula

2tbsp Strawberry Jam

1tbsp Rice Vinegar

Note: If you are here from the ‘Dinner Plan’ the jam is leftover from the stuffed chicken.

Jam:

8oz Strawberries

2/3c Sugar

2tsp Lime Juice

Time Breakdown:

Total (without jam): 10 minutes

Total (with jam): 30 minutes

Prep: 5 minutes

Construction: 5 minutes

Method:

  1. Make jam if not using leftovers.

  • Chop stems off. Cut some strawberries into chunks. Blend the rest into puree

  • Add strawberries with sugar and lime juice to sauce over medium-high heat. Stir until combined.

  • Bring to boil while stirring for 2-3 minutes.

  • Reduce to simmer. Once jam has thickened, remove from heat (about 20 minutes).

2. Cut cucumber in half. Stand one half on it’s side like a tower, and thinly slice cucumber from the flat side.

3. Peel shallot. Thinly slice shallot so each piece is nearly translucent.

4. Lay bun on cutting board or plate. Add mayo and jam to both sides.

5. Fold each slice of ham in half and place on bottom bun with small overlaps. Lay swiss on top of ham.

6. Place cucumber on top of swiss, followed by shallots, then then arugula.

7. Splash rice vinegar over veggies.

8. Slice sandwich in half and enjoy!
